Refactor: dynamic loading for ChatGptClient

The ChatGptClient class has been moved to
`mode.stateless...ChatGptClientStateless` and is now loaded
dynamically based on the `gptMode` setting, paving the way for the
upcoming ChatGptClientStateful class.
